Moana: Origins On A Plate Dinner at The Butler

For the second Chef’s Dinner Series, Chef Amber partners with The Fish Girl and Chef Carolyne Helmy for a shared seafood dinner on Wednesday 6th May.

Moana, meaning ocean in Māori, celebrates the bounty of the sea and the people who tend to it. Chef Amber is joined by Umar Nguyen, affectionately known as ‘The Fish Girl’ and Chef Carolyne Helmy to explore the theme ‘Origins on the Plate’, a shared seafood dinner celebrating producers, place and connection.

Though the collaborators come from different origins, Māori/Pacific, New Caledonian and Vietnamese/Australian, they are united by a shared philosophy rooted in respect for ingredients, care for the environment and a commitment to sustainable seafood.

Guests will enjoy a beautiful set menu starting with light seafood snacks, followed by raw and cured seafood, seasonal shellfish, a seasonal vegetable course and whole fish as the centrepiece. This is a special long table event, bringing together guests, chefs, producers and industry friends around a shared meal. A rare opportunity to connect, share stories and spark conversations about provenance and sustainable seafood.

Umar Nguyen ‘The Fish Girl’Umar Nguyen is the founder of Fish Girl Pty Ltd, a sales and marketing platform dedicated to connecting Australian seafood primary producers directly with chefs. With a background as a chef and over a decade working alongside fishermen, farmers and industry leaders, Umar has built a reputation for her unique ‘water to plate’ approach, championing transparency, sustainability, and real relationships within the seafood supply chain. Driven by family, community and a deep respect for the ocean, Umar’s mission is simple – to share sustainability stories and ensure a future for Australian seafood, from water to plate.

Chef Carolyne Helmy – Originally from New Caledonia, Carolyne Helmy brings a rich French culinary heritage to everything she creates. Now Chef de Cuisine at The Star Gold Coast, she curates menus and experiences for VIP guests at The Darling. Passionate about mentoring the next generation and drawing inspiration from travel and culture, Carolyne believes every dish tells a story.
