Introducing The Butler’s New Winter Drinks Menu
Our Bar Manager Jaicob Greenhill curates a new winter cocktail list here in Potts Point.
From a sweet Raspberry Sour, to the new spiced Kentucky High Tea, there’s a cocktail for everyone, plus new winter wines and so much more! Jaicob is immensely proud and excited to use his cocktail skills to create the new drinks list here at The Butler. You may spot some of our all-time classics, including our famous Please & Thank you, plus some exciting new creations.

Jaicobs Top Three New Cocktails
The sweetness from the Rhubarb syrup, the slight bitterness from the raspberry liquor and the citrus from the Lemon Myrtle infused pisco really balances out to make an amazing drink.
Made with El Tequileno Reposado Tequila mixed with a salted cola syrup and verjus which takes that tequila edge off a little but not too much, with a slight bitterness from the verjus. My favourite spirit is tequila and my favourite cocktail is an old fashioned so this combines both of those together which is perfect in my eyes.
It’s a beautiful blend of wattle seed infused makers mark, Brookie’s wattle seed & Macadamia liquor finished off with a spiced mandarin syrup and black tea. A nice spiced and nutty whiskey highball.
What were you most excited about creating this new winter cocktail list?
“Creating this winter cocktail list at The Butler was a great experience! Pulling all of my previous knowledge of spirits and flavours together to create the perfect cocktail list.”
As the weather cools, what's your top winter wine recommendation?
“The Popplevej ‘Sort Sol’ Cabernet Franc is a perfect wine for the colder days with its hints of dark cherries and blueberries, finished off with some white spiced pepper. That will help keep your body nice and warm this Winter!”
What is The Butler's perfect agave cocktail & food pairing?
“Our Mezcal old fashioned would pair perfectly with our chocolate mousse cake, the smokey and earthy flavours from the mezcal would help cut through the richness of the chocolate mousse.”

Take us through your career progression & what you love about working at Applejack?
My first ever job trial in Sydney was as a dish hand and funny enough, I did not receive the job. I then became a drink/food runner making, my way up to a food supervisor and progressing into a waiter not long after. I felt like I needed a change from the floor so I got a job as a barback which led into my first bartending roles working in a few restaurants and pubs. Then finally to here at The Butler!
Out of all of my experience, working with AppleJack is by far the best company i have worked for, everybody here is in it together. From the constant support from our owners Ben & Hamish, to the help from other staff wherever needed. But most of all is that we are all just one big Hospo family looking out for one another.
