The Butler In Bloom Spring Dessert & Cocktails
Sustainable practices and minimising waste were front of mind when creating The Butler In Bloom menu.

We donate weekly to the Wayside Chapel in exchange for seasonal produce from their incredible rooftop garden. Head Chef Amber Doig has used some of these ingredients to create a Butler In Bloom dessert, a Coconut Piloncillo Parfait with hibiscus and lemon myrtle sorbet that is both delicious and sustainable.
Applejack bar managers, Cameron Freno RAFI North Sydney and Jaicob Greenhill The Butler Potts Point have teamed up to create a cocktail that adopts sustainable practices.
Using seasonal produce the Lil Davo cocktail, uses sustainable practices to make you and the planet feel good. From repurposing the ginger pulp to make the edible garnish, to minimising citrus waste by using super juice, a technique gets the most out of citrus flavours.
