Have you tried a new cocktail at The Butler recently?

Here’s some insider knowledge on some of our current favourites!

We sat down with Lyndsey, Bar Supervisor at The Butler, to get her recommendations on which cocktails to get around this season and there’s certainly one for every palate!

The Butler Sydney Cocktails

ONE: The ‘Hidden Agenda’

The Hidden Agenda certainly has a motive and that’s to get your taste buds tingling!

This delicious cocktail takes a vibrant twist on the classic Margarita. Jalapeño Del Maguey Vida Mezcal, Aperol, falernum and lime are shaken together with ice then poured into a glass rimmed with chilli powder.

We recommend this as a pre-dinner cocktail. Enjoy alongside the Mezcal cured Ōra king salmon as the freshness of the dish is complimented well by the spice of the cocktail.

Why Lyndsay loves it: “The spice is subtle and not too overpowering. It also has a beautiful vibrant orange colour so is very grammable”

TWO: Tropical Notes

Enhance the tropical vibes that The Butler provides with this fruity & refreshing cocktail!

We use pineapple-infused Havana Especial Rum, Barsol Pisco, verjus, home-made salted passionfruit, soda & dehydrated pineapple skin to create a tropical crowd pleaser!

The perfect afternoon or weekend drink to enjoy without Rock Oysters or delicious Ibero-American Salsas.

Why Lyndsay loves it: “It’s refreshing and perfect to sip on during lunch out on our terrace The salted passionfruit we use is made in house and is delicious! Makes me think of being on holiday!”

THREE: Spiced Orange Espresso

This delicious cocktail espressos itself in a slightly different manner than others in its category. Rather than using vodka, we use Chairman’s Reserve Spiced Rum and orange bitters and combine with Kahlua, agave and of coarse… coffee!

This is perfect to enjoy after dinner with dessert, particularly the Honeycomb Semifreddo with blood orange or the Chocolate Mouse!

Why Lyndsay loves it: “It’s a bit different to your regular espresso that uses vodka and the spice of the rum and orange flavour compliment each other really well”

FOUR: Blood Orange-cello Spritz

Like an Aperol Spritz… but better! The Blood Orange-cello is the cocktail special this month, curated by Lyndsay, and it’s bloody good! The cocktail can be served neat or as a spritz, we recommend making this decision based on the time of day (between 1-6 it’s time to spritz)! Blood orange season is only for a short period of time from June until September so this delicious creation is only available for a limited time, making it even more desirable!

The versatility of this dangerously drinkable cocktail makes it perfect to pair with anything from our menu!

Why Lyndsay loves it: “It’s fresh and perfect to have on its own as an after-dinner nip or as an afternoon spritz”
